The wine industry has been trying to uncover the secrets of age-worthy white wines for years.

In 2020, the Bourgogne Wine Board (BIVB) launched a project named Volta, an ambitious research and experimentation program, in real conditions, working with forty wine estate partners and Vinventions Enology team, to gain a deeper understanding of the factors influencing wine aging.

Results from three consecutive vintages of data collection confirm the importance of polyphenol management during the prefermentative phase.
